Over the weekend we picked up some delicious blueberries so this morning while everyone else was sleeping Henry and I decided to make up some fresh blueberry muffins for everyone to have for breakfast. Henry absolutely loves to bake and before I even had a chance to asked for him to help he was pushing the kitchen chair over to the counter. He's so cute helping to pour the ingredients into my trusty Kitchen Aid and then he happily and very carefully put the muffin papers into the pan. We just took them out of the oven and they smell delicious, I am sure soon I will hear the other kids waking up and asking "What smells so good?" Elliott, will be in absolute heaven because he adores muffins. So, here is another delicious recipe to add to your recipe box.
Blueberry Muffins
- 3/4 stick (6 tablespoons) unsalted butter
- 1/3 cup whole milk
- 2 whole large eggs
- 3/4 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 cups fresh blueberries (12 oz)
Cream together butter, sugar, milk, eggs, and vanilla.
Whisk together flour, baking powder, cinnamon and salt in a bowl, then add to creamed mixture and stir until just combined. Fold in blueberries gently but thoroughly.
Divide batter among 12 muffin cups.
Bake until done.
Allow to cool and enjoy!
