Caramel Apple Coffee Cake





I have to use up more of my apples this morning. So, I was browsing recipes on line and saw this one and decided to give it a try. Henry and I made the cake together and had a great time. It got wonderful reviews so we'll see how everyone here likes it! I think this will make for the perfect after school snack!

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Grease a 10-inch tube pan or a 13x9-inch cake pan.
  3. In a mixing bowl, beat eggs until foamy, gradually add sugar.
  4. Blend in oil and vanilla.
  5. Combine flour, salt, and baking soda.
  6. Add flour mixture to egg mixture.
  7. Stir in apples and nuts.
  8. Bake at 350 degrees Fahrenheit for 1 hour and 15 minutes. Cake will spring back when touched.
  9. Cool pan on wire rack for 10 minutes.
  10. Meanwhile prepare topping.
  11. Combine butter, milk, brown sugar and pinch of salt in a saucepan.
  12. Boil for three minutes, stirring frequently.
  13. Tip cake out of tube pan onto serving platter.
  14. Drizzle topping over warm cake. Some topping will run down into center hole of tube cake --yummmy!.

    Well, I can't give you a review yet...it's still too warm to cut into. But, boy oh, boy it looks amazing and smells even better. I added cinnamon to mine because we all love cinnamon and apples together. I will update later when we give it the taste test!
