Fall is in the air and I couldn't be happier. This is my absolute favorite time of year. I just love everything about it especially the warm and cozy comfort foods that go along with it. A dear friend gave me this recipe and it's become a favorite at our house so I thought I would share it with you. These are truly de-lish. Like the ones you remember from when you were a kids that were soft and chewy. Trust me you will love these as much as we do.
Big Soft Ginger Cookies
2 1/4 cups all purpose flour
2 tsp. ground ginger
1 tsp baking soda
3/4 tsp ground cinnamon
1/2 tsp. ground cloves
1/4 tsp salt
3/4 cup butter softened
1 cup white sugar
1 egg
1 Tbls. orange juice
1/4 cup molasses
2 Tbls. white sugar
Preheat oven to 350 degrees F.
Sift together the flour, ginger, baking soda, cinnamon, cloves and salt.
Set aside
In a large bowl , cream together butter and 1 cup of sugar until light and fluffy. beat in egg, then stir in juice and molasses. Gradually stir in the sifted mixture into the molasses mixture. Shape dough into walnut sized balls and roll them in the remaining 2 Tbls. of sugar. Place the cookies onto an ungreased cookie sheet 2" apart.
Bake for 8-10 minutes in the preheated oven. Allow cookies to cool on the baking sheet for 5 minutes before removing them to wire rack to cool. Store in an air tight container.

By the way they are perfect with hot mulled cider.
